材料 Ingredients:
300克竹節蝦 300g Fresh Prawns
70g 新鮮或罐頭菠蘿 70g Fresh/canned pineapple
配菜:青椒,紅椒,洋蔥,各60克 Garnish:
Green & red bell pepper, onions 60g each
一片厚切姜(拍鬆) 1 thick slice of ginger (crushed)
一粒蒜頭(拍鬆) 1 garlic clove (crushed)
一湯匙紹興酒 1 TBS Shaoxing wine
醃蝦調味料: Prawns marinade:
¼茶匙鹽 1/4 tsp salt
¼茶匙胡椒粉 1/4 tsp ground pepper
半隻蛋白 1/2 egg white
一湯匙生粉 1 TBS potato starch
咕嚕汁: Sweet & sour sauce:
兩湯匙白醋 2 TBS white vinegar
一湯匙清水 1 TBS water
1½湯匙白糖 1½ sugar
生粉水:兩茶匙生粉加1湯匙水 Potato starch mix:
2 tsp potato starch + 1 TBS water
茄汁兩湯匙 2 TBS ketchup
兩茶匙茄膏 2 tsp tomato puree
¼茶匙鹽 1/4 tsp salt
